We know our farmer
A large part of our tallow comes from Chris Hedeager. He has cows at Ølgod in West Jutland and runs his farm according to biodynamic principles.
In the summer, he moves the cows to fresh grass every single day. This way, they always graze on clean, uneaten grass, and the area they have just left gets a chance to grow back. The grass has time to grow deeper roots, the soil retains water better, and the field recovers instead of being worn down
In the winter, they get hay. That is the difficult way to do it. The hay must be cut, dried, and brought home in the right week, and there are no shortcuts if the weather doesn't cooperate. It would have been easier to feed them concentrate - but then the cows would eat something other than grass half the year. What the cow eats and how it feels ends up in the fat.
Chris does the first part of the work. We do the rest.
